Lentil and Spaetzle Dish

Dice all your veggies, except kale, and sauté in a large heated pot with olive oil for about 8 minutes.

Add in your rinsed lentils, broth, bay leaf and salt and pepper.

Bring to a light boil, then reduce heat and cook for about 15-20 minutes or until lentils are mostly soft.

Add in cooked ham (optional), cooked lentils, vinegar and kale.

Cook another 5 minutes until kale has wilted, and new ingredients have heated.

Taste for liking and adjust vinegar, salt, and pepper to taste. You can also add more broth to make it more soupy.

Serve lentils over spaetzle or eat alone and enjoy!
