A delicious take on mac and cheese, made healthier with higher protein pasta, lots of veggies like broccoli and cherry tomatoes, and reduced fat cheese and butter. This recipe is fulfilling and perfect for a nutritious weeknight dinner.
Boil water and cook pasta according to package.
While cooking, wash your veggies, and cut your cauliflower or broccoli into florets.
About halfway through pasta cooking time, add florets.
When softened to desired texture, drain in a colander in the sink. Add the raw cherry tomatoes in the colander - they will slightly soften.
Add butter, milk, salt, and pepper to the heating pot and melt.
Add back in pasta, florets, and tomatoes, then cheese.
Mix well and add spinach. Season with salt and pepper, or add more cheese as desired.
